Sorry that you encounter problems.
A 500 error don't "trash" your system and is often due to your server. Your website work well !!!
To uninstall jSeblod CCK, it's very easy, you have just to uninstall jSeblod CCK component and all others extensions are uninstalled automatically.
You do not wait our answer and help on jSeblod CCK forums, post a review and a vote on the JED very quickly, it's easy and not very nice. You don't help Open Source author.
